Day 3-4: Transported to a large wholesale mandi and stored.
Day 5: Bought by your local thela-wala or corner store.
Day 6-7: Finally displayed for you to buy.
By the time you get it home, that "fresh" tomato is already a week old. It’s lost vital nutrients, moisture, and flavour. It’s running on borrowed time, and that’s why it spoils almost immediately.
2. The "Cold Chain" is Broken
Fresh produce is delicate. To stay fresh, it needs to be kept in a "cold chain"—a consistent, cool temperature from the farm to your fridge.
In our current system, that cold chain is non-existent.
Vegetables sit in the open sun at auctions, in hot warehouses at the mandi, and on an open-air cart all day. This heat and exposure accelerate the ripening process, encouraging bacteria and mould to grow. The produce is essentially "cooking" long before you even buy it.
3. The System Lacks Transparency
When you buy from the market, you have no way of knowing the truth.
Where did this lauki (bottle gourd) really come from?
When was it actually harvested?
What pesticides or chemicals were used on it?
